The key to eggplant steak frites' success is to prep in the kitchen while the grill preheats. Also, make sure to prep the sauce so the meal can go directly from the grill to the table: Chimichurri sauce tastes even better as the flavors meld, so don’t be shy about making it in advance.
This is an incredible vegan version of chicken noodle soup, made with chickpeas instead of chicken and orecchiette instead of egg noodles. Cooking the pasta in the soup will yield a velvety, substantial broth, but for a leftover-friendly version, boil the noodles separately so they don’t bloat in the broth over time.
