No surprise: We're all about having our pasta, pizza, and tacos and eating it too. Living gluten-free doesn't mean you have to skip out on your favorites, either. Whether you're celiac, trying to accommodate party guests, or simply needing to cut out gluten, we've got plenty of amazing recipes that you'll be surprised just happen to be gluten-free! The big win? You can still eat all the best comfort foods like stuffed peppers, Instant Pot pho, and homemade gluten-free pasta.

When it comes to making gluten-free recipes, you're going to want to watch out for a couple ingredients that may seem harmless but actually contain gluten. Soy sauce, which contains gluten, comes in a gluten-free version, and you can use tamari in a pinch for all those stir-fries. Tortilla chips are nearly always gluten-free, thanks to corn as a base. Worcestershire sauce, which you'll need for our Reuben bowls, is almost always gluten-free, but do look out for malt vinegar (which does contain gluten).

Now that you know what to look out for, you can get to cooking Tuscan butter shrimp, oven-baked pork chops, and one-pan chicken and quinoa. $5 says nobody even notices you made an entirely gluten-free feast!

If you ever wondered what exactly is gluten and what happens to your body when you go gluten-free, we've got tons of handy guides about this mysterious protein. Classic Stuffed Peppers

Of all the food you can stuff, stuffed peppers are at the top of our list. Bell peppers are large enough to hold a lot, strong enough to keep their shape in the oven, and mild enough in flavor to go with just about anything. Here we’re filling them with beefy, tomato rice, and shredded Monterey Jack cheese, but you can customize them to fit your taste.

Tuscan Butter Shrimp

We like using shrimp without their shells because it's easier to eat—peeling shrimp when they're covered in sauce can get messy. If you're down for the extra work, though, leaving the shells on will lead to a more flavorful sauce. Shrimp shells provide tons of delicious seafood flavor, which is why they're often a main ingredient in seafood stock.

Greek Stuffed Chicken

On its own, chicken breast is sort of a blank canvas. But stuff it with Greek salad-inspired ingredients, and you've got an insanely flavorful and fun weeknight dinner. As for the technique? We looked to one of our all-time faves: primavera stuffed chicken. The trick to both is cutting the veggies super thin. If you've got a mandoline, now's the time to use it!

air fryer pork chops

Air Fryer Pork Chops

Most of the time, we don't get very excited over pork chops. Often overdone, they come out dry, sad, and flavorless. Cooking them in an air fryer changes all that. Due to the intense heat circulation that happens, the outside crisps slightly while the inside stays nice and juicy.

There's a lot of richness going on here. Bacon! Butter! Cheese! To cut all the fat, you need some acid. Enter freshly squeezed lemon juice. It'll brighten your bowl up BIG TIME. Hot tip: Add lemon before salting to taste at the end.

Crispy Chipotle Chicken Tacos

Extra-crispy on the outside and cheesy on the inside, these tacos are so much fun to make and eat. Putting cheese directly in your skillet might sound wrong, but it works! Once off-heat, the cheese starts to harden and crisps up, giving the texture of a crunchy taco shell, but super-delicious.

Slow-Cooker Garlic-Parmesan Chicken

When you think Parm + chicken, you may be thinking of the melty, saucy chicken Parm, but you might like this version even more. All the flavor from the chicken thighs, butter, garlic, and thyme seep into the tender baby potatoes for a fully satisfying, comforting meal.

Halloumi Salad

We think it's due time that halloumi, the brined Cypriot cheese, got its time in the spotlight. Besides the delightfully squeaky texture (where the cheese curd lovers at?) and the tangy, salty flavor, the high melting point is really what makes this cheese stand out—when heat is applied, it develops a delicious golden crust that is so delightful in this salad.

Italian Sausage & Pepper Frittata Affogato

Breakfast meets dinner in this marinara- and mozzarella-topped dish. Fittingly, the Italian word "affogato" means drowned, which explains the marinara topping. It lends this dish a vibe somewhere between a breakfast frittata and pizza, meaning it’s enjoyable for pretty much any meal of the day.

Pastelón

Akin to a Puerto Rican lasagna, pastelón layers up crispy fried sweet plantains with melty mozzarella cheese and picadillo, a mix of ground beef, tomatoes, sofrito, herbs, briny olives, and a pop of sweetness from raisins. It takes a bit to prepare all the elements, but it’s worth it for this sweet and savory dish you can easily serve to a crowd.

Buckwheat Galettes With Ham & Egg

Like their sweet cousins, crêpes, galettes hail from Brittany, France. Because they're made with buckwheat flour, galettes are extra nutty, making them perfect for pairing with savory fillings for a quick dinner this fall. Here, they're filled with the classic ham, egg, and cheese combination, known as "galette complète" in French, but feel free to switch it up if you like.

Twice-Baked Potato

We kept our twice-baked potato simple so that you can take it where you want it. Anything and everything goes well mixed into a twice-baked potato. Bacon is a classic choice, but we also love horseradish, broccoli, or sriracha all mixed in. If you want to go the extra mile, add a scoop of hot homemade chili and a dollop of sour cream on top before serving for an all-out version!

Stuffed Cabbage Rolls

This recipe is based on gołąbki, a Polish dish in which parboiled cabbage leaves encase a minced meat filling of either pork or beef with onions and rice. The best part? The meat and the rice cook in the cabbage itself, meaning very little work on your part (yes, please!). Don't feel like rolling? Make our unstuffed cabbage casserole instead.

Cauliflower Baked Ziti

Don't miss out on Italian pasta just because you're cutting carbs. OK, fine: There's not actually any ziti in this recipe. But you honestly won't even notice. The roasted cauliflower does a solid job of replacing the pasta, trust us.

Baked Pineapple Salmon

Giving the salmon a quick broil at the end of cooking gives the marinade a chance to caramelize—it's too good. Just make sure to keep a close eye on it so you don't overcook the salmon! Two to three minutes is all you need under a hot broiler.

Here’s a quick and easy dinner that’s high in protein and takes very little effort. We love the Tex-Mex spices here; the chili powder and cayenne add a nice kick that the avocado and sour cream perfectly offset. Of course, feel free to use a little less of either spice if you prefer.

Paella Verdura

This veggie-packed paella comes together in under an hour, and even better, most of the cooking happens in the oven. Briefly returning the skillet to the stovetop after baking is the key to achieving a crispy rice crust on the bottom, often referred to as socarrat (meaning “burnt” in Catalan).

Instant Pot Pho

Few soups are as comforting as a heaping bowl of pho. The Vietnamese beef-bone based soup is usually chock-full of noodles, fresh herbs, and any number of toppings like cilantro, bean sprouts, thinly sliced round eye, or even meatballs. And with a broth that typically is an all day affair, your Instant Pot comes in clutch to cut that cook time way down.
